12/15/11 V. Mertz hires Jon Seymour as Head Chef: V. Mertz is proud to announce the addition of Jon Seymour as Head Chef. Chef Seymour has a diverse culinary background which began at V. Mertz in 2007. He since has worked in the best kitchens of Omaha and around the world. In early 2011 Chef Seymour studied under René Redzepi at Noma in Copenhagen, Denmark. Noma has been voted the best restaurant in the world in 2010 and 2011. During his time at Noma Jon developed a deep appreciation for freshness, natural flavors and camaraderie in the kitchen. Returning to V. Mertz Chef Seymour brings a passion for creating honest, naturally dynamic flavor combinations that reflect his diverse background as well as his Midwestern roots. Jon’s menus are seasonally inspired and locally minded. He enjoys developing organic flavor combinations leading to food that is honest, natural and delicious. Guests at V. Mertz can expect exciting menu additions and can experience Chef Seymour’s first full menu on New Year’s Eve.
11/29/11 V. Mertz Holiday Lunches V. Mertz will open for lunches Tuesday, December 20 thru Saturday, December 24. The menu can be viewed online and reservations are accepted between 11:30AM and 1:00PM. The holiday season is a time for friends, family, and celebration. V. Mertz looks forward to hosting many special gatherings and being a part of this joyful time of year.
